Remember when I brought you those fabulous healthier lemon bars? If you tried them, you know how good they taste.

But guess what? I wanted to make you another lemon dessert that anyone could enjoy in a matter of minutes. So, I combined the flavor of my lemon bars with my vanilla mug cake recipe and the result was a perfectly soft and moist lemon-flavored mug cake.

You simply can’t go wrong with this lemon mug cake, it’s a light and refreshing option to end a meal. This healthier lemon mug cake is perfectly sweet and moist and packed with tangy lemon flavor. A must-try!

Ingredients needed 

This lemon mug cake has the perfect soft, tender crumb, plus a sweet, slightly tart flavor from both fresh lemon juice and lemon zest. Here are the ingredients you’ll need:

  • Almond flour – this mug cake calls for almond flour. There is no substitute in this recipe. I like to use Bob’s Red Mill brand.
  • Monk fruit – Sweetens and flavors the cake without any additional sugars or calories. If you prefer, you can sub any granulated sugar you like.
  • Ghee – I like to use ghee in this recipe because it adds flavor and is keto and paleo-friendly, but melted butter or melted vegan butter is a great substitute!
  • Vanilla extract – a hint of vanilla brings out the incredible flavor in this mug cake.
  • Egg – one egg will give this cake a wonderful texture.
  • Baking powder – to ensure the cake has the perfect rise and texture.
  • Lemon juice + lemon zest – the star of the show!

How to make a keto lemon mug cake

This recipe for a lemon mug cake is super easy and can be made in a flash! The full, printable recipe is at the bottom of the page, but here’s a quick rundown:

  • Prepare mug. You’ll want to use a 6-ounce mug or small bowl. Be sure to grease it well with ghee, coconut oil or cooking spray.
  • Stir ingredients. Combine all ingredients and stir until you have a thick cake batter. Pour the batter into your mug.
  • Cook. Pop the mug cake into the microwave for 1 minute or until set. 
  • Enjoy. Once cooked, you can enjoy it as-is or top with any favorite toppings like fresh berries and yogurt.

Tips for the perfect mug cake

  • I love using monk fruit in my healthier baked goods. It’s an all-natural sweetener with zero calories. If you would rather use granulated sugar, that totally works.
  • Gently stir the ingredients until just combined. Over-mixing the batter can lead to a tough cake.  
  • Microwave times vary, so your mug cake may not take quite as long or it may need to cook a little longer.

Ingredients

  • 1/4 cup almond flour (I use Bob’s Red Mill)

Ingredients for an almond flour mug cake:

This healthy vanilla mug cake recipe is made with just seven simple ingredients you probably have in your pantry right now. Here’s what you need:

  • Almond flour – The base of this mug cake is almond flour, which keeps the cake gluten-free and adds protein and healthy fats.
  • Monk fruit – We’re naturally sweetening this mug cake with monk fruit.  Feel free to sub with any granulated sugar you have on hand.
  • Coconut oil – To add a bit of moisture to the batter. You can sub with any oil or even melted butter.
  • Vanilla – Use vanilla seeds or vanilla extract to give this vanilla mug cake that classic vanilla cake flavor.
  • Egg – You’ll need one egg to give this mug cake structure and the perfect texture.
  • Baking powder – To help the mug cake fluff up and rise.
  • Pinch of salt – Pulls the flavors together. You’ll only need a tiny bit.

How To Make Paleo Vanilla Mug Cake

Brace yourself.  This recipe is crazy easy to make!

  1. Grease an 8-ounce microwave-safe mug with coconut oil (butter or cooking spray would work as well).
  2. Add almond flour, monk fruit, coconut oil, egg, vanilla (beans are best but you can also use extract), baking soda and salt.  Stir until you have a beautiful, rich cake batter.
  3. Pop in the microwave for one minute or until the cake is set through and springy on top.
  4. Cool and enjoy!

I love this mug cake topped with whipped cream and fresh berries but it’s also delicious as-is.

Tips For Making Keto Vanilla Mug Cake

Skipping refined flours and sugars is the key to keeping this vanilla mug cake paleo and keto-friendly.
  • Almond flour.  Rich in healthy fats and protein, almond flour is naturally a low carb flour option that creates and super moist, low carb mug cake
  • Fresh vanilla beans.  While this mug cake can be made with vanilla extract, fresh vanilla beans take the flavor to a whole new level.  The flavor of fresh vanilla beans is beyond any other vanilla flavor, so I highly recommend you use them if you can. Look for vanilla beans that are plump and shiny, you definitely don’t want them to be dried out.
  • Monk Fruit.  An all-natural sweetener, with zero-calorie, monk fruit has been on the rise.  I have been experimenting with it a bit in my baking and really like it.  If you don’t need to keep the recipe keto-friendly and prefer not to use monk fruit, any granulated sugar can be swapped in 1:1.

One of the easiest ways to elevate the quality of the food that you eat, is to make it from scratch.  Whether you crave chocolate chip cookies, brownies, or blondies; making food with your own two hands is a powerful way to upgrade the quality of your ingredients and infuse the meal (or in this case, dessert) with love.

But, what if you are craving chocolate cake but only want one slice?  Why, make mug cake of course (vanilla mug cake is also a delicious option!).

What Is Mug Cake?

Mug cake is a single serving of cake, made in a mug and cooked in the microwave.

People LOVE them because it’s an easy way to satisfy a sweet tooth without baking an entire cake.  It’s also a fun way to enjoy a sweet treat, with relying on highly processed, store bought options.

How Do You Make a Mug Cake From Scratch?

It’s actually very easy to do.

Start by greasing a microwave-safe mug with coconut oil, butter or cooking spray.  Be sure your mug holds at least 8 ounces of liquid, because the cake rises quite a bit when cooking and you don’t want the batter to spill over the cup.

Then add all of your ingredients to the cup and stir util you have a nice, rich cake batter.

Pop in the microwave and cook for about one minute or until the cake has set through and is springy on top.  It’s seriously, just that easy.

What Make This Mug Cake Keto + Paleo Friendly?

Great question.  Let’s take a look at the ingredients, that make this recipe keto and paleo friendly, shall we?

  • Almond flour. Made from ground almonds and rich in health fat and protein, almond flour is low-carb and gluten and grain free.
  • Cacao powder.  Made from dried and un roasted cacao beans, cacao powder is less processed and therefor, a bit healthier than cocoa powder.  BUT, either will make a delicious cake, so use what you have.
  • Monk fruit. An all natural, zero-calorie sweetener that can be subbed in 1:1 with granulated sugar when baking.  I have recently began experimenting with monk fruit and do like it BUT if you don’t have any on hand or prefer not to use it, try subbing in coconut sugar (or any granulated sugar you may have on hand).

Can I Make This Mug Cake Egg Free?

I tried making this cake with a chia egg and it did not work well for me, so I don’t recommend it.  If however, any of you find a way to make this recipe with an egg, please share your tricks down in the comments below.

This cake was inspired by the ingenious Elana from Elana’s Pantry.

Elana has a magical ability to create just about any baked good you can imagine sans the flour (although she doesn’t stop at baked goods!).

Her secret?!

Almonds!

Unbelievable, but true, Elana can make anything from cupcakes, biscuits, breads. cookies and more; basing her recipes around almond butter and almond flour. It’s really quite unbelievable if you ask me, but I’ve made several of her recipes and can assure you that they are delicious (and I am not even gluten-free!)

On another note, I was so excited to be feeling better (FYI I have finally made it to the second trimester- yahoo!) that when I got to the farmers market I loaded up on tons of seasonal fruits and veggies.  I mean TONS!  (Have I ever mentioned that I can have a bit of an all-or-nothing personality? I mean you don’t spend 10 years of your life on and off diets and yo-yo dieting if you don’t – they kind of go hand in hand).

So let’s just say that after about 8 weeks of doing nothing in the kitchen I was ready to go to all in!

My point?  I had a handful of ripe pears (and other ingredients!) that I needed to use ASAP and had “snack cake” on the brain.

I wanted something not too sweet and not too heavy that would hit the spot while being a nourishing treat for me and my family!

I made a few tweaks; I swapped the apple for pear, added a diced pear for a little texture, cut back on the cinnamon and added a bit of nutmeg and orange zest.

But the body of the cake was just as Elana suggested; almond butter, eggs, cinnamon, and a kiss of honey.  So nutritious I dare to even call it cake (I like to think of this as more of a breakfast).

Not only did my husband and I love this cake but Katie gobbled it up too!  And with an ingredient list like this one, I was happy to see her enjoy it so much.

I made a simple orange cream topping by combining some Greek yogurt with a spoonful of honey and some orange zest.  It was a delicious combo for sure, but have no doubt, whipped cream would be delicious as well.
