Healthy Greek Yogurt Caesar Salad Dressing

Healthy Greek Yogurt Caesar Salad Dressing is a lighter version of the classic! Made with lemon, Dijon, garlic, anchovies, and Parmesan cheese, this creamy dressing gets an extra protein boost from the yogurt. It's easy to make and absolutely delicious!

Ingredients

  • 1 clove garlic
  • 2 anchovy fillets
  • 1/3 cup + 2 tablespoons Greek yogurt
  • 1/3 cup parmesan cheese
  • 2 teaspoons Dijon mustard
  • 1/4 cup lemon juice

Instructions

  • Add garlic and anchovies to a small food processor and pulse until broken down.
    Add Greek yogurt and flavorings to blender.
  • Add the greek yogurt, parmesan cheese, dijon mustard and lemon juice. Blend until you have a thick, creamy salad dressing. Taste and add salt and pepper as desired.

  • Store this caesar dressing in an airtight container in the refrigerator for up to 5 days.

Notes

After sitting in the fridge, shake the dressing before using. If it is too thick for your liking when you take it out of the fridge, simply add a bit of water and mix or shake well.
